She has a great personality but has lost most of her fur and is covered in scabs and sores. The shelter's vet did a scrape and said it was demodex.
Some types of mange are cureable, ask the vet or shelter staff. I would say go for it!!

I think only you can answer your own question. In no way can anyone say whether you should or shouldn't adopt this dog. We can only give you a little insight into mange. Mange mites live in the hair follicle. A lot of dogs have them in small amounts but a healthy immune system keeps them under control causing no problems.
I can say this is a medical problem and you will have to ensure this dog gets the proper medical attention it needs to recover from this.
90% of younger dogs recovery from this with treatment and their immune systems mature.
If it's a older dog you may need to do some tests to find out why her immune system is weakened. Thyroid, liver, kidneys, age.
If you do decide do adopt her, make sure you get her on a high quality food and daily vitamins to up that immune system and some fatty acids for her skin.
Do some research, ask questions, and only then make your decision. Then you can truly decide with your knowledge and your heart.
