I want a haircut, but I want to know how much can I really remove without putting myself in any danger.

First I would take off a little bit at a time something that you think is the right amount, but if you do take off a large amount remember it will grow back. I envy you I always want to do my schnauzer but I always chicken out and take him to the groomers.

Honestly, I would not recommend shaving or trimming your dog, although trimming any feathering (the really long bits of fur at the bottom of the belly and on the legs) would be fine.

Dogs, especially working breeds (Labs, Shepherds, etc.) should never be shaved in summer, because their fur acts as protection from the heat, the cold, and the elements (rain, snow, etc.) In order for fur to fulfill its normal function, it has to be there and groomed to make sure it's free from dirt and tangles.

No quality groomer will shave a working breed, but they will trim (make the dog look nice).

I take out undercoat rather than over all length. A simple metal flea comb does a really good job. First dampen the coat then brush and comb with a coarse then fine toothed comb before using the flea comb. Start low on the legs and work up. He gets his leg feathers, belly fringe, ears and tail trimmed with thinning shears so he looks more or less a natural beauty.

Taking out undercoat prevents most matting and there is good air circulation at the skin. He looks nice and shiny black. If he were trimmed his ugly gray undercoat would show.
