Some can. and some don't.
It's depending on the pressure the groomer does.

I don't know what Yoki is referring to using the word "pressure" in reference to grooming and ears.
I don't know of any instance where a groomer would CAUSE an ear infection, however, lots and lots of time us groomers discover them when cleaning a dog's ears. I always tell the owner that the dog needs to see a vet when I find one. This is especially common in those breeds that require the hair to be plucked from the ear canal... lots of times the whole ear canal is totally filled with gunk and hair and after the hair is plucked and the gunk cleaned out the owner may notice the dog bothering it's ear more than usual. However, a good groomer would have advised the owner to see a vet and get the ear(s) taken care of. In no way would the groomer have caused this problem, it was present when the dog came in to be groomed.

Not usually no. I have seen some groomers that arent very careful when bathing the face and end up getting water in their ears and then not even wiping them out with a towel!!! Thats cause for trouble and can lead to ear infection. Have known some dogs that cant get their ears plucked as it causes ear infections as well. Alot of times i notice a ear infection I always tell the owners.

Ear infections can happen if water gets into the ear and it's not dried, especially in floppy earred dogs where there's is no air circulation. When Deogie gets bathed his groomer is very careful around his head and places cotton balls in his ears.

It's very possible, yes. As Deogie said, water trapped deep or in the folds of the ear can cause infections. So can pulling hair from the inside of the ear (as some groomers do with longer haired breeds like terriers, for example.)
Some dogs are allergic or sensitive to ear cleaning formulas. Other groomers use hydrogen peroxide or alcohol to clean the ears, which is not only dangerous, it's almost guaranteed to cause problems and burns.
